The Context:

Tunisia’s olive oil is shaped by a dry Mediterranean climate and traditional farming practices. Olive trees are widely spaced and dry-farmed, relying primarily on natural rainfall, which promotes deep root systems and resilient trees adapted to their environment.

The Meaning

These conditions result in olive oils with natural balance, stability, and concentration. Abundant sunlight and mineral-rich soils contribute to distinctive flavor profiles and consistent quality, defining the specificity of Tunisian olive oil.

Production Process

STORAGE

Our oils are filtered and stored in temperature-controlled stainless steel tanks,preserving their aroma, freshness, and antioxidant properties until bottling.

EXTRACTION

Cold-pressed using advanced technology that extracts oil without heat orchemicals. This mechanical process preserves the oil’s natural flavor, aroma, andnutritional properties

TRANSPORT

Freshly harvested olives are delivered to our mills the same day—neverexceeding six hours from grove to press. This rapid transport preserves freshness andprevents oxidation, maintaining peak quality from harvest to extraction.

HARVESTING

Hand-picked with care and respect for the land, our sustainable harvestingmethods protect tree health while ensuring that only the finest olives are selected,preserving quality from the very first step.
